San Sebastián in Basque Country Spain

Favorite dish of the moment?
Any delicious meal with the right friends

What is the most important cooking lesson you have learned thus far?
I love duck, and learned to start cooking the duck breast skin down on a cold cast iron at low temp for 20 min, it will make your skin crispy and lower the fat content, then turn it around and cook it for just 3 to 5 minute till medium rear. Bonne Appetit!

At the moment, my favorite place in the world is Cyprus, my father's home country.

My favorite dish at the moment is pho... ramen... any sort of noodles and broth!

What is the most important cooking lesson you have learned thus far?
The most important thing I learned in the kitchen is to always be planning for your exit--That means proper preparation, keeping your station clean and thinking two steps ahead.

My favorite dish of the moment is very much in the moment.
Time of year, mood, ingredients, etc... but really anything that takes love and time. Barbecue kinda encapsulates that!

What is the most important cooking lesson you have learned thus far?
Always know your end game in a dish. And also sometimes less is more... honor and highlight the flavor of a ingredient, and stop.

Any gorgeous destination hotel.

My boyfriend's homemade spaghetti carbonara. He makes the pasta from scratch!

Less is more.

Paris is… and then places like The Medici fountain at the Jardin du Luxembourg, street, the stairs on the side of the Gare de l’Est, an many, many more..

Ris de Veau aux girolles… but tomorrow will likely be something else with wild mushroom though!

What is the most important cooking lesson you have learned thus far?
Butter (from Normandy!), Persil and salt are core ingredients… I learned that from my grandmother Nelly!
